Italian Master Classes

Aldo Zilli, celebrated TV chef, has the knack of combining great simplicity with great taste. In The Zilli Cookbook he presents real, contemporary Italian recipes which are full of robust flavours and are, as he puts it, 'minimally mucked-about' with.

Spend the morning with Aldo cooking recipes from his latest book in addition to learning the tricks of the trade, great presentation tips and how to use seasonal produce.

Your day starts early, at 6.30am, at Billingsgate fish market in East London, where Aldo will give a lesson on what to look for when buying fresh fish and go through all the variety of fish available at different times of year, you can also buy fish for yourself to take home at Aldo's prices from his regular suppliers.

Then you will be treated to the best greasy spoon breakfast at the market café with all the characters from the market.

Back at Zilli Fish and you will make from scratch 4 different types of pasta, pasta sauces (vegetable, meat and fish). Then the fish class, cleaning, gutting, filleting, frying, grilling and baking, after which it is time for an aperitif as you will have tasted some fish so a glass of very chilled Prosecco is served by our Maitre D who will explain the different types of sparkling Italian wines.

Back to the kitchen to make a dessert with our pastry chef, taste the sauces and finish the seasoning. By now it will be one o'clock , time to enjoy the fruits of your labour, weather permitting the lunch is served al fresco with different wines for different foods. What a day..!

Aldo Zilli's love of food began in a small village by the sea on Italy's central Adriatic coast. Following his recent trip to his home land he decided to share this beautiful region, in the middle of the Italian peninsula, an area untouched by mass tourism. Aldo, London's renowned Italian chef and restaurateur, is known throughout the UK for his award winning and innovative restaurants, cookery books and many television appearances.

Aldo is delighted to announce The Zilli Cookery School . It will offer you the chance to enjoy a unique cookery and activity programme - a great opportunity to experience classic Italian cooking all in the beautiful surroundings of Abruzzo.

Here you will find the highest peaks of the Apennines, deep canyons and valleys, national and regional parks, wide sandy beaches and an astonishing wealth of natural and artistic beauty. It also boasts three National Parks and protected nature reserves. Abruzzo is yet to be discovered by tourists from the UK. With its winding panoramic roads and neatly painted hillside homes in ochres, red, creams and yellows, it is a dramatic region of Italy.

Known for food, wine and hospitality, this will not be like other tours. Instead it will be like embarking on a wonderful Italian holiday with close friends. Aldo has selected the itinerary following a recent trip and personally knows everyone involved. This is not a trip that will be forgotten easily but rather one that will stay in your heart.

The Zilli Cookery School will offer:


Aldo Zilli and a selection of renowned Italian Chefs will be teaching you all you need to know about Italian food in the Sporting Hotel Villa Maria near the coast. Whether a true beginner or an accomplished chef, you will leave enriched and changed forever by the creativity, knowledge, zest and fun encountered under their tutelage. In groups not exceeding 12 people, they will guide you through the philosophy of Italian cuisine.

Food at its finest

The organic farming tradition of Abruzzo will offer you an unparrelled opportunity to experience some of the world's finest wine, olive oil, meat and cheese. Fish direct from the waterfront markets. Fruit and vegetables raised by nature alone. This is your ‘lezione sul campo', lesson from the land!

Can't cook, won't cook


So, your partner can't stand the heat of the kitchen. Bring him or her along and we will tailor make a programme to meet their leisure requirements. Special membership is arranged at the nearby 18 hole golf course with its fabulous facilities. Scuba diving, sailing, walking and white water rafting, even ski-ing is available and close at hand during the appropriate months in the glorious landscape of Abruzzo. At lunchtime and in the evening they will join the rest of the group for fine dining. Alternatively, they can join you on your afternoon trips to the wineries, olive groves or cheese farm.
Itinerary
Day one: Thursday
  • Welcome cocktail at Villa Maria upon arrival: 17.30
  • Late afternoon: relax and rest in the park, swimming pool, private beach and wellness centre
  • Evening: dinner at a local Organic Agrotourismo Restaurant
Day two: Friday
  • Breakfast in the Hotel
  • 10.00 – 12.00 a.m. : first lesson
  • Lunch (13.00 o’clock) where you eat the results of your mornings hard work.
  • Afternoon ( starting from 17.00 o’clock) :
Visit to wine – producing firm Marramiero and dinner to the country estate Terre di Varano:
17.00 P.M.: transfer from the Hotel
17.30 P.M.: guided visit and aperitif to the wine-producting firm “Marramiero” in Rosciano.
18.45 P.M.: arrival to the country estate “Terre di Varano” and visit of the area.
19.30 P.M.: Dinner with typical products of Abruzzo; sampling of the olive oil produced by the country estate, of the wine produced by the wine-producing firm Marramiero.

Day three: Saturday
  • Breakfast
  • Visit to the open market in Pescara in order to select the ingredients for the cookery lesson.
  • 10.00 12.00 : second lesson
  • Lunch ( 13.00 o'clock) :
  • Afternoon : guided visit to the discovery of our beautiful Region; drive along the beautiful “Costa dei trabochi”.
  • Evening: sunset’s dinner on the trabocco (in Pescara) . A wonderful fish restaurant with matching wines.
  • Return to the Hotel
Day four: Sunday
  • Early morning breakfast
  • Afternoon: transfer to airport

Zilli's Special Masterclass

Christmas Masterclass with Aldo Zilli on the 19th december 2009

Aldo will be holding a very special Masterclass... Early start at billingsgate market to buy your fish for your starters and learn all about fish.

Then after a quick breakfast its back to the restaurant kitchen to learn the Mediterranean way of cooking Christmas lunch from suckling pig, turkey to duck and large whole roast fish on top of making your own pasta with various sauces.

As a special guest for the day, Enzo di Marino, Aldo's Vegetarian Chef will be there to show you a special Vegetarian Christmas roast.

You will sit down and eat all the lovely food that you have made, washed down with a glass or two of Prosecco and some great Italian reds with your cheese platter & pantone.
